Inspired by Jeffrey Morgenthaler I tried this recipe from Simon Difford:


  • 2oz Rum
  • ¾oz Lime juice
  • ½oz Simple Syrup

Shake, strain into chilled cocktail glass.

It was really very well balanced, not so tart that it hurts your throat and also not so sweet to glue your lips togheter.
I didn’t tried with regullar rum, I always thought Daiquiris made this way were missing something.

I once had one with a very citrus smell and nice fresh taste but was too sweet for me. Classics and simple cocktails like this is very easy to screw.
I’ll try a tasting to compare the regular/aged rum differences.

PS: The version with Bacardi Superior is very good, just be careful to not over dilute it, give it a shorter shake.
